Role Overview

The Director of Food & Beverage is a key member of the senior leadership team, responsible for overseeing the complete Food & Beverage operations across the resort’s multi-venue environment. This role requires a dynamic, guest-focused leader with strong operational discipline, financial acumen, and the ability to elevate service standards across diverse dining concepts.


Key Responsibilities

Operational Leadership

  • Oversee daily operations across all 6 +  restaurants, 5 + bars, in-room dining, weddings, events, and banqueting.

  • Maintain 5-star service standards, ensuring consistency of product, service, and guest experience.

  • Provide a strong floor presence during peak service periods…. be hands on .

Culinary & Service Excellence

  • Drive menu development, seasonal concepts, and speciality dining in collaboration with the Executive Chef.

  • Implement and monitor service standards, training programs, and guest-experience initiatives.

  • Uphold food safety and hygiene compliance across all venues.

Financial & Strategic Management

  • Oversee F&B budgets, forecasting, cost control, and revenue optimisation.

  • Lead margin improvement strategies across food, beverage, and labour.

  • Develop promotions, events, and concepts aligned with guest segments (leisure, weddings, MICE).

People & Culture

  • Lead, mentor, and develop a diverse F&B team across multiple outlets.

  • Champion a culture of accountability, performance, and continuous improvement.

  • Identify talent and implement succession planning within the department.

Guest Experience & Brand Representation

  • Maintain strong visibility with guests, VIPs, wedding coordinators, and travel partners.

  • Handle guest feedback and service recovery with professionalism and urgency.

  • Ensure the resort’s brand standards are upheld across all F&B touchpoints.


Qualifications & Experience

  • Proven experience as a Director of Food & Beverage, EAM – F&B, or multi-outlet F&B Manager in a 4.5–5 star resort.

  • Experience in island, resort, or remote high-volume environments preferred.

  • Strong financial acumen with demonstrated success in revenue growth and cost containment.

  • Exceptional leadership, communication, and training capability.

  • Ability to thrive in a multicultural environment.
