The Director of Food & Beverage is a key member of the senior leadership team, responsible for overseeing the complete Food & Beverage operations across the resort’s multi-venue environment. This role requires a dynamic, guest-focused leader with strong operational discipline, financial acumen, and the ability to elevate service standards across diverse dining concepts.
Oversee daily operations across all 6 + restaurants, 5 + bars, in-room dining, weddings, events, and banqueting.
Maintain 5-star service standards, ensuring consistency of product, service, and guest experience.
Provide a strong floor presence during peak service periods…. be hands on .
Drive menu development, seasonal concepts, and speciality dining in collaboration with the Executive Chef.
Implement and monitor service standards, training programs, and guest-experience initiatives.
Uphold food safety and hygiene compliance across all venues.
Oversee F&B budgets, forecasting, cost control, and revenue optimisation.
Lead margin improvement strategies across food, beverage, and labour.
Develop promotions, events, and concepts aligned with guest segments (leisure, weddings, MICE).
Lead, mentor, and develop a diverse F&B team across multiple outlets.
Champion a culture of accountability, performance, and continuous improvement.
Identify talent and implement succession planning within the department.
Maintain strong visibility with guests, VIPs, wedding coordinators, and travel partners.
Handle guest feedback and service recovery with professionalism and urgency.
Ensure the resort’s brand standards are upheld across all F&B touchpoints.
Proven experience as a Director of Food & Beverage, EAM – F&B, or multi-outlet F&B Manager in a 4.5–5 star resort.
Experience in island, resort, or remote high-volume environments preferred.
Strong financial acumen with demonstrated success in revenue growth and cost containment.
Exceptional leadership, communication, and training capability.
